The vineyards of Alsace are concentrated in the foothills that flank the Vosges Mountains on the east side, and run down to the Rhine plain. The most obvious characteristic of Alsace wine is its highly developed, strongly scented bouquet, a result of the cool, temperate growing climate, which tends to favour a long, slow ripening of the grape.
